Made from carefully selected and hand harvested Espadin agaves from Oaxaca region in Mexico. It's cooked in traditional cone-shaped wood ovens for 3 to 5 days. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape. Cooked pinas are then milled using stone pulled horse. The fermentation process is done in wooden tubs. Afterwards, it is double distilled in copper pot stills and rested in American oak barrels for 3 months. The resulting flavour has soft hints of wood that are subtly combined with sweet notes of cooked agave awith a pleasant and smoky finish.
